The olive tree does not sprout: it emerges. Like an ancestral memory, like an ancient song carved into stone, it appears where the sky is clear and the earth smells of salt. Born on the sunlit slopes of the southern Caucasus, Syria, Palestine, and Anatolia, Olea europaea has traveled for millennia along the routes of myth and trade, following Phoenician sails and Greek amphorae, sinking its roots wherever it found sun, silence, and hands ready to welcome it.
Cultivated as early as five thousand years ago among the waves of the Aegean and the Levantine coasts, it crossed the Mediterranean like a silent pilgrim. The Greeks offered it as a gift to the gods, the Romans turned it into an agricultural empire, medieval monks guarded it in their cloisters like a sacred relic. It arrived in Southern Italy on ships laden with oil and promises: in Puglia, Sicily, and Calabria it found a second homeland. There, among white farmhouses and dry-stone walls, it settled with humility and perseverance, until it shaped the very landscape. Today, it is impossible to imagine a sunset in Salento without the twisted silhouette of an olive tree, still as a deep thought.
Liquid gold and green memory
The olive tree does not give only fruit: it tells stories. Its gnarled wood has warmed hearths and carved icons; its leaves, dried and infused, soothed fevers and unrest. But above all, it is its oil that holds an almost sacred aura: the “liquid gold” of the Mediterranean, once used to anoint kings and athletes, and which today enriches every table with its inner light, the light that only the sun can distill.
In antiquity, the juice of its drupes was medicine, food, fuel for votive lamps. Its wood, as hard as the character of those who cultivate it, is prized in cabinetmaking: spoons, pipes, sculptures. Its leaves, instead, have conquered modern herbal medicine: from their silvery veins is extracted an active compound with hypotensive and immune-boosting virtues.
When an olive tree falls, it never truly dies: it often rises again from the stump, with new shoots that tell of resilience better than any word could.
In the South, a soul entwined with the landscape
In southern Italy, the olive tree is more than a vegetal presence: it is a familiar shade, a rural totem, the spirit of the place. Salento’s farmers say that, during harvest, the trees listen to voices: if the stories are sincere, the yield will be generous. In Basilicata, it is said that whoever plants an olive tree does so for their children’s children. In Sicily, they dance around the centuries-old olives at the winter solstice, asking for protection and abundance.
Walking among the Apulian olive groves, time slows down. The light filters through the leaves like in a green cathedral, and the twisting branches seem to pursue a silent dialogue with the sky. Nowhere, more than in the South, is the olive tree so deeply rooted in culture: in folk songs, in proverbs, in breads blessed with new oil, in the slow gestures of the oil mill.
A tree that listens to silence
